Work flow for printing B&W images

I am working on a B&W photo book and have a couple of questions.

What would be the best workflow for exporting B&W images that will be used in a photo book? Should the images be left as a sRGB or converted in Photoshop/Affinity Photo to a grey scale before sending out to book printer?

Any help would be appreciated.
