Want to create my own borders...
...and not use presets. How can one do that? Any way to create uneven borders? (Sides different from top and bottom)

If you're talking about plain color borders, you can add a color fill layer under your photo and use 4 masking bugs to set whatever size you want them to be.
There are instructions here to make a drop shadow effect that might give you some ideas...
