Transfer of files to another drive
Before I do anything I might later regret ...
I store all my "active" (RAW) images on an internal SSD (F:). If they have been edited, it has been done with ON1.
I'm planning to use ON1 RAW (copy and paste) to temporarily transfer them to an external drive, change the F: drive to one of a larger capacity, then copy and paste all the files to the new F: drive.
Thoughts/advice?

If all your images are inside a single folder hierarchy then all you need to do is copy that single folder to the temporary external drive. Swap your internal drive and copy that folder to the new internal drive and you'll be back in business.
If you have multiple top-level photos folders copy each of them in the same fashion.
Personally, I wouldn't bother with copying them back to the internal drive. I keep all my photos on an external SSD. Whenever I have had to move to new computers over the 20 years I've been doing this it was a simple matter of connecting that drive to the new system and I was done and ready to start editing again. That drive has migrated from an internal hard drive back in Macintosh G5 days to the SSD and a laptop and now to my Mac mini M1.
Whatever you choose to do I highly recommend having a full backup of the drive you are replacing before you start the migration process just in case.

Whilst it is not my plan to use the Windows File Manager, am I right in thinking that it is not recommended? I seem to remember reading something about this

Because you are moving entire folders using the windows file manager is not a problem. It is when you move individual image files that you have to be careful and remember to take the .on1 and .xmp with it.
