It depends on risk appetite. Saving three version at a time is less risky than only one. If something goes wrong and you recognize the problem relatively late, your backup may have the issue copied...

The issue that the .on1 sidecar file is not ending up in the waste bin when deleting a file accidentally is a long known issue, has been reported to support many times and has never been corrected....

Have you tried reinstalling the graphic card's driver? That helped me some time ago when I had this problem.
